Chapter one, the overnight shift
Mixed at nine, baked by two, on the van by four.
Every Goldcrust loaf is made the night before you sell it. The dough is mixed at 21:00, proved slowly through the evening and baked from midnight in two long tunnel ovens.
That is why the bread on a Goldcrust shelf at 06:00 is still soft when your last customer buys it at night.
02:00, the ovens
Two tunnel ovens, 48,000 loaves a night.
Our ovens run on gas with a diesel standby, so a grid outage never means a missed bake. Loaves cool on spiral racks for 90 minutes before slicing, because slicing warm bread squashes it.
- Gas fired with diesel standby
- Cooled 90 minutes before slicing
- Bagged and date coded on the line
04:00, the vans
Six routes leave Surulere before the traffic wakes up.
Thirty-two vans load by route and leave in waves from 03:45. The Island vans go first to cross the bridges before the queues; the Ikorodu road vans follow at 04:20.

Become a distributorThe van is at my kiosk at 05:10 every day, rain or shine. By eight the first crate is gone. I have sold Goldcrust for six years and I have never had to throw a stale loaf away because they take back what I cannot sell.

What our distributors say
Our supermarket bread shelf used to run empty by noon. Goldcrust now delivers twice on Saturdays and the shelf stays full.
The burger buns hold up under hot suya and pepper sauce. My customers can tell the difference.
My hawker team sells 300 mini loaves before school starts. The trade desk sorted our credit after three months.
