Chapter I, The water

It starts with a borehole 90 metres under Barnawa

Kaduna water is hard, so we filter it three times and add back only the minerals each beer needs. A pale lager wants soft water. A porter likes a little more body.

3 filtration stages

Splash of clear water in a glass

Chapter II, The grain

Barley malt, and sorghum from Kaduna farms

Up to 40 percent of the grain in our lagers is sorghum from farms near Kachia and Kagarko. It brings a dry, slightly tart finish you will not find in imported beer.

Chapter III, The bloom

Hops for bitterness, hibiscus for colour

Hops come in sealed bags. Hibiscus, ginger and mangoes come from the market in Zaria, bought by the same trader every week. Bloom is where our name came from.

6 kilos of hibiscus a week

Chapter IV, The wait

Then we do the hardest thing: nothing

Each beer rests in steel tanks for 21 to 35 days. Lagers sit cold and quiet. Our porter waits longest. Rushing is the one shortcut we never take.

Chapter V, The taproom

A long wooden bar, a garden and a highlife band

The taproom seats 120 under a mango tree and a brass ceiling. Friday nights bring live highlife, Sundays are slow and green. Adults only, alcohol-free choices on every table.

My friends are half drinkers, half not. At Brass & Bloom both halves get something made with care, and the Zobo Fizz is as good as anything on tap.

Zainab, example guest

The brewery tour was the best 75 minutes in Kaduna. We left knowing why sorghum makes the lager taste the way it does.
